During this private workshop we will come into contact with an Umbrian tradition: butchery. Butchering is a very ancient profession, and Umbria, in particular, has managed to make it a true culinary art renowned since Roman times. Today our chef will talk about the anatomy of the pig, the different types of cuts and will teach us all the secrets of this culinary tradition: from the basic techniques to meat processing, to the salting and seasoning of the meat, to the production of sausages. At the end, we will be able to enjoy a well-deserved lunch with the results of our work accompanied by other typical Umbrian products!
The quad tour will give you the chance to discover an unexpected side of Umbria: you will see the nature that surrounds Assisi in Mount Subasio with a pleasant stop in the woods for an aperitif. The activity is guided and lasts approximately 2 hours along a nature trail (it could be shared with other participants).
