Almond Tree Resort: We stayed at this glorious resort this past weekend - what an absolutely perfect spot to stay, relax and feel human again. First off, the staff working here ... Betsi and Karin were incredibly attentive, always checked on us and ALWAYS had a beautiful smile on their face. Sitting on the beach and having them check in with you from time to time was fantastic - I have NEVER had such a perfect vacation spot! And whenever my beer bottle ran dry, there was always another one. They must be faulty beer bottles, because mine always seemed to be empty :-) The rooms are beautiful - we had a large room with two queen size beds that were absolutely perfect - THANK YOU Dean - along with a couch that opened up into a double bed that my daughter used, and it couldn't have worked out better. They do have air-conditioners in the room, and we found that if we closed all of the windows and outside vents when we left for dinner and turned the air conditioners on, by the time we got back from dinner it was a perfect sleeping temperature. And then in the morning, we simply opened all of the vents again and turned off all of the air conditioning units. The breeze coming off of Corozal Bay was absolutely beautiful. The food was delicious. The only 'meal' they serve is breakfast here, but they have a great offering of a french toast or scrambled eggs breakfast. They have fresh fruit that tastes like it just came off the tree. Throughout the day they have a great offering of 'bar' type foods - fried shrimp, chicken fingers, buffalo wings etc ... didn't have a bad plate of food here, ever! We also met Bob, who was the owner, and he was fantastic to talk with and made us feel so welcomed to stay here. He provided some great insight on life here for those looking to relocate - which we are :-) Dean, the hotel manager was also fantastic.
