This hands-on class in Oaxaca will explore the region’s most famous dish: mole. You will learn about the flavours, ingredients and basic techniques that go into making mole, and see how the sauce comes together from its different components. Along the way, the session will give you a sense of why mole is so central to Oaxacan cuisine.

You will also make handmade tortillas and prepare mezcal margaritas. The practical work will let you shape and cook tortillas by hand, and mix margaritas using mezcal as the base spirit. The experience combines demonstration and active participation, so you’ll both observe key steps and practise them yourself.
